Almond Pancakes

Getting away from processed pancake mixes is awesome. Try making pancakes out of almond flower! Almonds are packed with vitamins, minerals, fiber and keep you full! These pancakes are great to have in the morning because they will keep you full all day!


  • 3/4 cup almond flour
  • 1 tablespoon potato starch
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 organic egg
  • 3/4 cup almond milk
  • 1 teaspoon maple syrup
  • 1 teaspoon olive oil


  1. Combine all the dry ingredients in a bowl and all the wet ingredients in another separate bowl.
  2. Slowly combine the wet ingredients into the dry and stir until smooth.
  3. On medium/low heat place about 1/4 cup batter on a skillet and cook for about 4 minutes each side. Or until you see bubbling in the middle.
  4. Makes about 4-6 pancakes.
